Ingredients
- 4 cups mixed salad greens
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1 bell pepper, diced
- 1/4 cup crumbled feta cheese
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
1. In a large salad bowl, combine mixed greens, cucumber, tomatoes, red onion, bell pepper, and feta cheese.
2. In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, garlic, salt, and pepper.
3. Drizzle the dressing over the salad just before serving.
4. Toss gently to coat all ingredients with the dressing.
5. Serve immediately as a side dish or add grilled chicken for a complete meal.
