Ingredients
  • Ingredients:
  • * 2 pounds flank steak sliced thin
  • * 1 red,green,yellow and orange bell peppers, thinly sliced
  • * 1 medium onion, thinly sliced
  • * 3 tablespoons olive oil
  • * 1 teaspoon garlic powder
  • * 1/2 teaspoon chili powder
  • * 1 teaspoon smoked paprika
  • * 1 teaspoon ground cumin
  • * Pinch of cayenne/hot pepper (optional)
  • * 1 teaspoon salt
  • * 1/2 teaspoon garlic and herb blend
  • * Chopped fresh parsley
  • * Half orange juice
  • * Fresh thyme
  • * 6-8 flour tortillas, warmed
  • * Your favorite fajita toppings: shredded cheese, salsa, sour cream, guacamole

1. Marinate the steak: In a bowl, combine olive oil, orange juice, chili powder, cumin, smoked paprika, cayenne/hot pepper (if using), salt, garlic and fresh parsley. Add the steak and toss to coat. Cover and refrigerate for at least 30 minutes or up to an hour. .

2. Prepare the vegetables: While the steak marinates, slice all the colored bell peppers and onion.

3. Heat a large skillet or grill pan over medium-high heat. Add 1 tablespoon of olive oil.

Step 5

4. Cook the steak: Add the steak and fresh thyme to the hot skillet and cook until desired doneness (depending on the thickness of your steak). Take it out and set it aside.

5. Cook the vegetables: in the same skillet, add the peppers and onion to the pan and season with smoked paprika, salt,cajun seasoning and a teaspoon of butter. Stir occasionally, until softened and slightly charred, about 5-7 minutes. Remove the vegetables from the pan and set aside.

6. Warm the Tortilla: in a non-stick pan, add a bit of butter, when melted, toss in the tortilla and heat up for 40secs on both sides.

Serve the steak fajitas with your favorite toppings and enjoy!
