Ingredients
  • pineapple mango salsa🍍
  • -1/4 cup diced pineapple
  • -1/4 cup diced mango
  • -1 tbsp red onion
  • -1/2 tbsp cilantro
  • -juice from 1/2 lime
  • -chile lime seasoning
  • light chipotle sauce🌶️
  • -in a food processor or blender, add:
  • -1 large chipotle pepper
  • -2 tbsp (40g) chobani nonfat plain Greek yogurt
  • -1 large garlic clove
  • -cilantro
  • -pepper
  • -water to blend
  • -optional: add honey
  • pico de gallo🍅
  • -1/2 cup diced tomatoes, seeds removed
  • ~1/4 cup red onion, diced
  • ~1 tbsp jalapeño
  • -1/2 tbsp cilantro
  • -salt
  • -juice from 1/2 a lime
Instructions
Step 1

chipotle shrimp🍤

Step 2

-thaw 8oz Trader Joe’s raw shrimp & pat fry

Step 3

-season with garlic powder, paprika, pepper, & 1 diced chipotle pepper in adobo sauce

Step 4

-cook in olive oil spray in a cast iron skillet on medium heat (2-3 mins each side )

Assemble🍚

-add 1/2 cup cooked rice (I use Trader Joe’s organic basmati rice), 1/2 cup shredded lettuce, mango salsa, pico, & 25g avocado to a bowl. Top with chipotle sauce, additional cilantro & enjoy! Whole recipe is one serving!
