Ingredients
- INGREDIENTS
- + 3-lb bone-in ribeye steak, 2-inch thick
- + Kosher salt
- + Black pepper, coarse
- + 4 TBSP butter, unsalted
- + 4 cloves garlic, lightly smashed
- + Compound butter (recipe on my website)
- + Flaked sea salt
- + High-heat neutral cooking oil
Instructions
DIRECTIONS
+ STEP 1: PREP
Kosher salt, 12-24 hours in advance. See website for details.
+ STEP 2: TEMPER
Rest at room temp for 45 minutes.
+ STEP 3: SEASON
Preheat oven to 450F. Heat cast iron skillet on medium-high heat to about 450F. Dry steak with a paper towel and season again with kosher salt immediately before searing.
+ STEP 4: SEAR
Add oil to skillet. When it begins to smoke, sear the steak until the crust is formed and dark brown. Flip the steak and repeat. Reduce heat to medium-low and discard the oil.
+ STEP 5: BASTE
Add fresh oil to skillet and top steak with garlic, herbs, and butter. Spoon some butter into the hot oil, then start basting the mixture onto the top of the steak to melt the remaining butter. Baste the steak with the butter, spooning it over the herbs and steak for 2-3 minutes. Turn off the heat.
+ STEP 6: ROAST
Finish the cook in oven. Check the steak’s doneness and baste it at about 5 minutes. Return the steak to the oven until it’s about 5-7 degrees from your desired doneness. See website for doneness chart.
+ STEP 7: REST
10-15 minutes before slicing. Top with compound butter and flaked sea salt.
